Back-to-School Bread August 25, 2008

   Back-to-School Bread


   4 eggs, beaten

   1 c. oil     (I use 1/2 c. oil and 1/2 c. applesauce)

   3 c. sugar

   2 c. apples, cored, peeled and grated    (I dice mine.  I like chunkier pieces.)

   3 ½ c. all-purpose flour

   1 t. baking soda

   1 tbsp. cinnamon

   1 t. salt

   ¾ c. water

   1 t. vanilla extract



   Mix eggs, oil, sugar and apples together;  set aside. 

   Combine flour, baking soda, cinnamon and salt;  mix into apple mixture, alternately with water. 

   Add vanilla;  blend until smooth.  Pour into 2 greased and floured 9 x 5 loaf pans, filling ½ to 2/3 full.  

   Bake at 350 degrees for 1 hour and 15 minutes. Makes 2 loaves.

  1. Going to try it… The kids have apple days this week and we are supposed to bring in an apple treat of sorts.

  4. Yummy!! We made it again for hubby’s food day. They all wanted the recipe, so I shared it again.

  5. I ended up using a mini food processor. Works GREAT!! Oh. The first time I made the bread I think I used baking powder instead of soda. oops!
